San’in is a treasure trove of food: gifts from the sea, gifts from the mountains, soba, and local sake. What can you eat, when, and where? Here’s a guide organized so you can choose by season and by area.
Seasonal calendar (when is crab in season?)
- Winter (Nov–Mar) — The season for matsuba-gani (the male zuwai, or snow crab). The king of San’in winters. The fishing season opens in early November
- Summer (from early summer) — natsuki, the summer rock oyster, comes from the seas of Sakaiminato and San’in
- Year-round — Sakaiminato’s kaisen-don (seafood rice bowls; the port is famous for its landings of fresh bluefin tuna), Izumo soba, Daisen soba and Daisen okowa (steamed glutinous rice)
- Fruit — Pears (nijisseiki and shinkansen varieties) are in season from summer through autumn
Crab and oysters can’t be had outside their season, so it’s a good idea to plan your trip around the month you’re aiming for.

- Seafood — Port markets such as the Sakaiminato Fish Market. Crab in winter, rock oysters in summer
- Soba — Izumo soba (warigo soba, served in stacked round dishes) and Daisen soba. Izumo soba, one of Japan’s three great soba, is a must
- Local home cooking — Daisen okowa (steamed glutinous rice) and Daisen’s gongen dango
- Dairy — Dairy products from Daisen Nyugyo, including Shirobara milk. For soft-serve ice cream, head to Milk no Sato
- Local beer & sake — Daisen G Beer, and local sake such as Chiyomusubi, Inata Honten, and Rihaku
- Pears — The symbol of Tottori. There are also pear juices and sweets

- Sakaiminato — Kaisen-don (seafood rice bowls), crab, and rock oysters. Fresh-caught at the port markets
- Mt. Daisen & Hōki Town — Daisen soba and okowa, G Beer, and pasture-fresh milk
- Izumo — Izumo soba and zenzai (Izumo is said to be the birthplace of zenzai, sweet red-bean soup)
- Matsue — Shijimi clams from Lake Shinji, and wagashi (traditional sweets; Matsue is a town of tea-ceremony culture)
